weekly recap: january week 2

It felt like life back to normal this week. Plus The Bachelor started again! Are you watching? Any favorites so far?
I spent all week working on a presentation for work that was due Friday and Iām happy to report I got it done and it went well! Since that took up basically all my time, I skipped book club this week. I also didnāt read the book so it wasnāt like I was going to be participating a whole lot. The next book they picked is called The Joy of Movement by Kelly McGonigal. Iām not sure Iāll read this one either but weāll see. Itās about how exercise helps us find happiness, hope, connection and courage. TBD.

recipes we tried
Upside Down Loaded Chicken Nachos ā so good šš¼ but I also LOVE nachos. These used salsa chicken, beans and cheese. Super basic and super delicious.
Barbecue Chicken ā made on the cast iron skillet; it had the char of a barbecue without all the extra work.
Hamburgers with Mac n Cheese ā we did the burgers on the skillet (amazing!) and the mac-n-cheese was in the pressure cooker. It was the easiest homemade macaroni and cheese ever. And it was really delicious ā even for the next few days as left overs.
