weekly recap + homemade hummus recipe

It’s with a heavy heart that I report about another fire that is burning out of control in Sonoma County this week. It’s causing panic, worry and a little ptsd. We’re starting to refer to October as “fire month” and today is one of the worst days with winds up to 80mph — we’re all a little on edge. I’ve been up since 3am; woken but the winds and kept awake by alert after alert on my phone. I almost didn’t want to send this recap today — just didn’t feel right — but in an effort to keep a small sense of normalcy around here, I figured it’s one thing I can do.

This week was also week two of clean eating and surprisingly I’ve been sticking to it! The only thing I caved on was coffee — Jamie says I’m a nicer person when I can have it so I felt I owed it to him 😝. This week I bought all kinds of snacks that I’m now obsessed with. Some of the chips are ones I will even continue to eat after the 30 days are done. Beanfield’s makes some delicious flavors and they are made with black beans. Try the sea salt flavor with my hummus recipe (see below) and you’re in for a tasty treat.

I also tried fake vegan cheese for the first time. Yep, that’s right. I did it. Never in a million years did I think I would be eating that stuff — I mean cheese is life! But when dairy gets cut out of your diet, you resort to the closest thing you can get. And honestly, it was’t half bad! Granted I ate it over pasta with sausage, so it’s not like I’m making a meat and cheese board with it, but if you’re looking for a dairy free way to enjoy the creamy deliciousness of cheese, it’s not a bad option.

I’m working on a post of how to style these, but so far I’ve worn them with an over-sized sweater and it’s the coziest look — see it here.

Sam Edelman Clara Mule — I wore these white mules all summer. They are super comfy and literally go with everything! I’ve even started to transition them into the fall because they are the perfect shoe when it’s still a little warm out.

recipes we tried

Pineapple Whole Chicken — if you are looking for a delicious chicken recipe that you can eat on all week it’s this one. It’s super similar to beer can chicken but with a pineapple instead of a beer can. I can’t believe how moist the meat was too! We ate this with brown rice and edamame.

Ground Beef Tacos — we tried a new taco seasoning recipe this week and loved it! Found it from Ree Drummond on The Pioneer Woman — it was a little spicy (it has red pepper flakes in it) but overall super flavorful and delicious.

Burgers — this was difficult for me this week since I’ve cut out dairy and gluten. I seasoned the patty with Mrs. Dash Table Blend Seasoning and ended up making a deconstructed burger bowl — ripped up the patty over shredded lettuce and added red bell pepper. It ended up be really good but I was definitely wishing I could’ve had cheese. Or In-n-Out sauce.

Brown Rice Pasta — I actually might not switch back to regular pasta after have this. It tasted identical to regular pasta (even Jamie liked it)! We did this with my mama’s pasta sauce recipe and it was wonderful!

If you watched my Instagram stories over the week, you saw we went grocery shopping for all the things on Sunday. One of the recipes I was most excited to make was a homemade hummus. I’ve never made one before but with this new clean eating I felt it necessary to try — I didn’t want to try to find one that worked within my parameters. Well, what I came up with turned out delicious!! So I had to share.

  • 1 can chick peas, drained and rinsed

  • 3 Tbsp olive oil

  • 3 Tbsp lemon juice

  • 3 Tbsp tahini

  • 2 tsp minced garlic

  • 1 tsp ground cumin

  • 1 pinch sea salt

Combine all ingredients in a food processor. Purée until mixture is smooth and creamy, about one minute.
